Cooking Class Day One....

Pepper Dec 01, 2010 07:12 AM

:::The cat of whom nobuddy knows nor cares about in any special way, makes him way to the stage and every very impressed with the industrial-strength, professional kitchen what haff been set up for this cooking course. Pepper bows and addresses the huge audience. Him waving a sharp, carving knife which alarms many but they not gonna meow anything on the chance that they may go into the holiday season looking like one of the blind mice ~ minus they tail ~ or heads. MOL (Just kidding)

Well, so, but, anyway, Pepper explains to the group that at any time, if any desires to step up on the stage and prepare a special dish, that would be wonderful. We all hear to laugh and giggle and EAT!!! So instructions must include enough samples to fatten every up!! MOL again.

Pepper says that he will begin by preparing a nice colorful vegetable casserole that him Mom-Joolie gonna make for real in a couple of weeks for company and she hope it taste good, but she actually not yet ever made it. But she is hopeful..... Here goes:

It called simply "Vegetable Casserole".... (simple enough, right?)

For 6 servings you will need:
1 cup long grain rice
2 Tablespoons butter or margarine
1/2 cup chopped onion
1 cup chopped carrots
2 cups broccoli flowerets
1 medium bell pepper, chopped
2 cloves garlic, minced or pressed
1 1/2 cups chicken broth
1 Tablespoon chopped parsley
Dash of pepper and salt
1 cup grated Cheddar cheese

To Prepare:
1. In a 2-quart casserole, saute the onions in the butter until soft.
2. Add the carrots. Cook over medium heat for about 3 minutes.
3. Add broccoli, bell pepper, garlic, and rice. Stir to blend.
4. Add the chicken broth. Bring to a boil. Cover with tight-fitting lid. Reduce heat.
5. Cook over low to medium heat for about 20 minutes or just until rice is done. Add parsley and salt and pepper.
6. With a fork, toss in the cheese. Don't mash the vegetables.
7. Put the casserole in oven. Bake at 350-degrees F. for about 10 minutes or until top is slightly brown. Serve.

::Pepper passes around a small dish of his casserole to every to taste and watches their reactions carefully. He dismayed that many spitting out the carrots. Him not surprised. Him Mom-Joolie not like carrots much either but he not gonna take them outta the recipe since it calls for carrots, but him not surprised to find that he gonna haff to clean up many spit up carrots at the end of this day! Phooey!! There are spit-out carrots all over the floor!! Pepper walks off the stage and go to him dressing room and pout. Little do him know, though, that the guests in the audience really, really loved the rest of the casserole! Some of them even licking the bowl!! Who knew? ::::

The audience anxiously awaits the next presenter and many hope that there gonna be a chocorat dessert sometime today!! Yum.:::

:::Pepper over-hears Becci's recipe and him cannot resist going into the audience just as the samples are passed around and he think those are just the best!! Pepper decide to get over being upset about the carrot-spitting ordeal and he go up on stage as soon as Becci finishes up.

He addresses the crowd in the audience with his Happy Face and decide to tell a joke to get every in a joyful mood. Do youse all know about the Mole Family? Well, early one morning the Mole Family awoke and Daddy Mole climbed to the top of the mole hole and sniffed the air. "I smell bacon frying!" he said. Momma Mole crowded in beside him and sniffed the air, "I smell eggs cooking!" she said. Baby Mole tried and tried to get to the top but there was no room left, so he said "All I can smell is molasses!!"

:::Pepper waits to see if any 'gets' the joke. No buddy do. They all sit there stone-faced and sober as judge kits. Pepper think to himself "Harumph!!" This crowd a bunch of sour pusses. Oh well, guess I better do another recipe.

Okay, Every. I gonna make a big hollyday favorite for youse all. It called "Spice Gumdrop Bars". You gonna need:

4 beaten eggs
2 cups brown sugar
1 Tablespoon cold water
2 cups flour
Dash of salt
1 teaspoon nutmeg
1 cup chopped gumdrops
1 cup chopped nuts

Mix eggs and sugar. Add water. Mix flour with other dry ingredients. Sift over gumdrops and nuts, tossing so that each piece is covered in flour. Add remaining flour and egg mixture. Mix. Spread in a 2X8X13-inch pan. Bake in 300-degree oven for one hour.

Pepper passes out the sweet bars and glad to see nobuddy spitting anything out this time. Fortunately, no carrots included in this particular recipe. Pepper take a bow but no buddy care about him; they just chatting amongst themselfs so Pepper take him leave and go sulk off to him dressing room. "Haruph" think Pepper to himownself.::::

Well, so, but, anyway, while Pepper off sulking, Unka John comes up on stage wiff hims recipe. He looks out ober da audience and smiles. Doodness, yu all such cute kits, he says. I gots a recipe fur dose hoo like to bake. It in meowmory ob Popoki and in honor ob my deer Tita. It called Portuguese Sweet Bread (also known as Hawaiian Sweet Bread):

Hawaiian Sweet Bread

Ingredients

* 6 C. flour (add more to reach right consistency)
* 2 1/2 C. sugar
* 4 eggs, beaten
* 2 pkg. yeast dissolved in 1/2 C. warm water (105 degrees) with 1/2 tsp. sugar
* 1 pint milk, scalded
* 2 tsp. salt
* 4 Tbs. butter

Directions

Put the scalded milk into a warm (so the hot milk wont break it) large bowl and add the sugar and salt. Stir until the sugar and salt is well dissolved. Melt the butter and add to mixture. Beat eggs and add to mixture. Add the dissolved yeast to mixture. Mix in 3 C. of flour. Add more flour as necessary to reach a dough ball that is springy but not sticky. Turn dough ball onto a floured board and knead until smooth, satiny, and no longer sticky.

Place the dough ball in a greased bowl. Turn dough ball so the entire ball in greased. Cover and let rise until dough ball doubles in size. Punch down, cover and let rise a second time. When dough ball has once again doubled in size, divide in half and knead on lightly floured board. Put into greased bread pans, cover lightly and allow to rise until double in size. Be sure to use a light cover for the final rise as the dough will rise above the bread pan rims.

Bake at 350 degrees for 40 minutes or until done. One easy way to tell if bread is done is to remove from the pan after 40 minutes and tap on the bottom with your finger tips. If the loaf sounds like it is hollow it is done. If not, put back into the oven and bake a few minutes more.

By da way, dis makes reely nummy French toast. Poucette, let yur mommy know dat, Otay?

Unka John passes out samples ob da bread, and da kits just devour it!

Mommy thinks that recipe looks delicious, Pepper. She is going to try it soon. Is it too late for us to sign up for these classes? Mommy wasn't feeling well last week, so I just got back to the village.
