Cooking Class Day Four

:::Pepper arises very early and full of energy and vigor. He very pleased that the cooking skool is going so well and everys' recipes have been so wonderful. He blows sekret kisses to all of the participants who haff stepped up and shown how to cook gud fuds. Pepper steps on the scales and not too pleased, though, that he is now packing on about 6 more pounds around 'the beam'. MOL He can no longer squeeze into hims favorite lavendar hollyday sweater ~ teeny, tiny reindeer or not ~ as he resembles a sausage in a casing. He puts on hims favorite Hawaiian MuuMuu that Poki once gave him for a surprise birthday gift. Flowing MuuMuus fit every!! "There!" says Pepper. "Time to go present another recipe!"....

When Pepper steps on stage, there are some gasps as no one really expected Pepper to wear a MuuMuu and most certainly they did not expect him to pair it up with an American Indian Chief Headdress! "What a nerdy nerdy that Pepper is!" somebuddy says. "He don't know nuttin about fashion!" says another. Pepper pay them all no mind. Him love hims muu muu and he love him fancy Indian head dress with all the feathers and such. He continue on...

I gonna prepare an old Native American favorite fud. It is Corn Pudding and you all will absolutely love it. It is a wonderful side dish for all kinds of things and is healthier than many other sides. You will need:

olive oil for brushing baking dish
2 cups corn kernels (either fresh corn taken from the cob or frozen corn)
1 small red bell pepper, finely chopped
1 small sweet onion (like Vidalia), finely chopped
1/3 cup grated Swiss Cheese
1/3 cup grated parmesan
2 Tablespoons flour
1 1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
2 eggs
1 cup milk

1. Preheat oven to 350-degrees. Lightly brush a 1-1/2 to 2-quart baking dish with olive oil and set aside. In a medium bowl, toss together corn, bell pepper, onion, cheeses, flour, mustard, salt and pepper.
2. In another bowl, whisk together eggs and milk. Stir egg mixture into corn mixture and pour into prepared dish. Bake until 'set', about 45 minutes.

::Pepper passes out little ramekins of his corn pudding and every temporarily forgets about how odd and strange Pepper is dressed. They beginning to get used to his crazy and unusual style and mannerisms. "I guess the world is made up of all kinds of different kits; none better or worser than anybuddy else and Pepper just marches to a differnt drummer than all of us, but him a nice kit and I kinda like him!" Pepper overhears somebuddy say. It make Pepper proud that he can be hims own kit and still have good friends. Him happy here in MeowChat where every is loved and respected and accepted for whomever they are ~ even if they nerdy and dorky like Pepper. ::::

Meow folks....I hope youz enjoy my 3 course dinner. We gonna start with the appytizer which is a yummy olive loaf served on a bed of ritz crackers.....Sammywhee gonna love them ritz!
Here goes....

These the Ingredients youz need:

2 cans (4 1/2 oz. each) chopped black olives, drained
2 cups crumbled blue cheese
1 package (8 oz.) cream cheese, softened*
1/4 cup margarine or butter, softened
2 tablespoons finely chopped onion
1 tablespoon lemon juice
1/2 cup chopped fresh parsley
Crackers Keebler® Toasteds® Sesame
- or -
Crackers Keebler® Town House® Original

Now here's what youz do....
1. Pat olives with paper towels to remove excess moisture. In small mixing bowl combine blue cheese, cream cheese and margarine or butter. Beat on medium speed of electric mixer until combined.

2. Stir olives, onion, and lemon juice into cheese mixture. Shape into roll, 1 1/2-inches in diameter. Wrap in plastic wrap. Refrigerate for 6 to 24 hours.

3. Remove plastic wrap. Roll in parsley. Serve with crackers.

Now if you haven't eaten too much of the appytizer, you may have room for the on-tray. And since we be cats, why not have a fish dinner? You can use any fish with this really, but bass is the best. Enjoy!

For this "Fish with Pear Jardiničre" dindin, you will need:

2 teaspoons vegetable oil
1 cup thinly sliced, peeled onion
1 cup thinly sliced, peeled carrot
1/2 teaspoon dry mustard
1/4 teaspoon crushed dried basil
1/4 teaspoon dried dill weed
2 pears, cored sliced
1 1/2 pounds bass fillets
2 tomatoes, sliced
1 lemon, sliced

Now you gonna heat oil in large non-stick skillet. Add onion and carrots; stir to mix well. Cover and cook slowly 10 minutes.
Mix together dry mustard, basil and dill weed. Toss with pears. Stir into onion mixture. Add bass, tomatoes and lemon. Cover and simmer for 10 minutes or until fish flakes with a fork. Serve hot.

And now for the yummy dessert! It an easy to make Black Magic Cake, but it furry yummy.

Forst you need these ingredients:
1 3/4 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup strong brewed coffee
1 cup buttermilk
1/2 cup vegetable oil
1 teaspoon vanilla extract

Now follow these directions:
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans or one 9x13 inch pan.
2.In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
3.Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
4.Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

So...did I get an A??

Riley, you definitely earned a double A , but then so haff the odders who prepared magnificent dishes and/or cookies and bars, too. You all have done a great job so far. Let's not stop just yet! A couple more days and then we will have our finale.

Okay, we furry late coming to class and we pawlojize. But we hope our Idyho spud resipppys make up fur it.

#1: Princely Potatoes fur 6

6 large Idyho baking spuds, baked at 450 degrees fur a one hour
1/2 cup butter, melted
1/2 cup hot mook
1 1/2 cups sour creme
3/4 cup chopped salary (like Mommy's haff been!)
1 1/2 cups grated Swiss cheese (from Wiscatsin, while we doing State loyalty)
1/4 cup chopped green yunyuns
1/2 teaspoon salt
1/4 teaspoon pepper
Dash Paprika (hurry to catch it!)

Take da baked spuds outta da ofen and cut a long oval slit in da top ob each one. Scoop out da potato, leaving a thin shell ob skin. Mash da potato meat.
Combine remaining ingredients, EGGSEPT da Paprika (iffn you haff eben caught it as it make its mad dash). Add combined ingredients to mashed spuds.

Stuff potato skins. Sprinkle wiff Paprika, who now totally outta breaf from dashing. Bake at 450 for 10 minitts.

#2: Basque Potatoes fur 4 (Mommy say dat dere more Basque peeples in souf-western Idyho dan ennywhere else egseptin in da French/Spanish Pyrenees where dey come from. Mommy wented to skool wiff lotsa Basque kids.) Ennyways, I digress. Here da resippy.

12 small to medium-sized new potatoes (cuz old ones mite haff stuff growing outta dems!), scrubbed and cut into equal sized pieces.
4 tablespoons butter
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon Paprika (apparently he haff lernt hims lesson and no dash dis time!)
Dash Cayenne (oh fine - now DIS one dashing. Sheesh!)
1 teaspoon crushed rosemary
1 teaspoon thyme
1/4 cup chopped parsley
Salt and pepper

In large ovenproof skillet, melt butter and oil ober low heat. Add garlic, Paprika, Cayenne (affer catching him); stir. Add rosemary and thyme. Sprinkle in parsley and stir mixture well. Roll potatoes in mixture until well coated. Add salt and pepper to taste.

In da same skillet; bake at 375 degrees for 40 minitts or until spuds are golden and tender, basting occasionally.

"This is a quick, but really nummy lil 'candy-cooky-confekshun' that I call "Baby Jesus inna Manjer." Iffen you not Christian, well no worries, cuz I also call it "Birdy inna Nest" ... it's furry furrsatile, you know. The lil kittens can easily make this resipe with some help from adultkits:

"Furst, you melt some choklit. Now I not gonna tell you what kind ... or how ... it's your choice. Use fansy choklit, use choklit coating, use choklit chips ... use the white kind, or scutterbotch ... it's furrsatile, remember! Just melt it. I like to melt it in a dubble boyler, a mix of choklit chips and choklit coating. Anyhoo ...

"While the choklit is meltin, put a piece of waxed paper on a cooky sheet, and lay out rows of ring purretzels. They can be found at wallyweird, or other stores this time of year. iffen you can't find ring purretzels, no worry ... it's furrsatile, remember! Use them minnyachure purretzels.

"When the choklit is melted, mix in a pawful of coconut. Don't like coconut? Don't panik, Willow! You can also use chopped nuts, crunched up cornflakes, a lil crushed cooky crums ... it's fursatile! Make it so it's kinda chunky but not too thick.

"Put a lil spoonful in or on each purrestzel ring or twist ... that's the manjer or nest. Then put a dry-roasted peanut on top for the baby Jesus or birdies. Don't got peanuts? No worries! Use an M&M, a jellybeen, whateber you got ... it's furrsatile, remember!"

"Let them harden up, and there you gots your Baby Jesus inna Manjer or Birdys inna Nest, or Baby Jesus inna Nest ... or somefing. Call it what you like ... it's furrsatile!"
