Aloha frum Kaua'i island! Had a veby nice Kitmas and den went to a Mochi pounding pardee yesserday. I ebin got to do part ob a batch myownself! It hawd werk but da results is sooooo nummy! I tell yu more about it affur I get home tonite, Otay?

Otay, heer's what Mochi is:

Take 5# ob rice and soak it in water for at least 3 days. Den yu cook it fur about an hour. Next it is put into a large stone mortor and pounded with big wooden mallets until the mass is veby sticky and glutenous - looks like soft dough. then it is put on a surface dusted wiff "mochiko" (rice flour). they break off small portions and roll them in mochiko and sumtimes wrap the mochi around fillings like peanut butter or azuki bean paste. last it is rolled in sugar and it is ready to eet. Da Japanese peeple make this for New Years. It is supposed to insure a sweet and good year.
