When will I know if my 26" amel is ready for an adult mouse. If he can get it down, does that mean that the size of the prey is appropriate? He seems to be in that in between stage where hoppers are too small.

If the snake can get the mouse down, its fine. If hoppers are too small, try a larger. Be sure you dont rush it. I've seen a snake refuse large meals after it could not swallow one that was a shade too large. There are various sizes of adults. Go and hand-pick a proper-sized f/t from the petshop.
