but what's a Tony? and will horseradish do instead?.........actually, i bet an emu burger wouldn't be bad but we'll probably never know as new jersey has already listed them as threatened....dammit. ;-] of course, new housing will drive them by the droves onto the turnpike and then they'll be extinct. price per lb. could skyrocket overnight! i'm calling my broker now to get in on this action asap!!....LOL!

Tony Chachere's Creole Seasoning. Best stuff in the world. Use it on seafood, steaks, popcorn, fries, your honeymoon, hamburgers, grilling, baking, whatever. I put it in my scrambled eggs, even. Man, there is NOTHING we don't use Tony's one down here.

Has an off flavor - like drinking coke from a tin can - but it is OK, with a little Tony's. Some Country Bob's would sweeten it up a little bit and take away that off flavor, I think, but I never tried it that way.

im from california.. theres more wiered stuff to eat here than anywhere. emu and ostrich meat is big here, emu burgers are common in the "wiered" restaurants in san fransisco and san jose, elswhere too. ive never had one but they LOOK like good normal red meat burgers.. they are red meat i guess.

I found emu to be better than buffalo and worse than nutra or muskrat.
Guys, I feel compelled to mention a couple of facts. First KJ is a transplanted CoonA** and only lives in Texas on what is known as a sympathy work card. Second by virtue or lack there of KJ's ancestory there is a saying here in the South that applies directly to him and that is the definition of a Cajun ie: a cajun is someone who will eat anything that does not eat him first. For goodness sake don't get him started by asking him the best way to prepare and eat great blue herons or leopard frogs, nutria etc.
All kidding aside though the Tony's is a great seasoning that comes out of LA.

That's funny: so did I! LOL. I had some fresh redfish I left the scales on, so I seasoned it with Tony's, cracker peper, et al. overnight. Grilled it over mesquite with butter an lemon yesterday. Hmmm, if that doesn't get those northerners' (who don't know what Tony's is) mouth watering, I don't know what is.
John, if you are still reading this, we also had some white beans made with smoked sausage from Rasek's in Hillje. We bought a lot extra and froze it last time we went down that way.
Anyone going herping in south Texas - stop at Praseks! LOL! They are 51% posted, but it's still worth it!

We fish the bays and surf along surfside and the further edges of Galveston Island. My new "hole" is just a marsh near the intercoastal water way. I go lightly only on the crab...crab doesn't need much spicing up. Here is a pic you might like from my trip the day before school started (sort of a last day of freedom trip even though I go once or twice a week anyway)...these guys are great eating. Too bad you can only take one per person per day. On a good day we can catch tons of these...but you get tired swimming out past the 4th sandbar and it is a bit unnerving kicking larger fish and bumping into jellies. Most people say we are crazy, but what real men need floaties? LOL.
You are right I moved to the Houston area from Southern California about 10yrs ago. About the only spice I still have in the cupboard in addition to the Tony's is garlic ... it takes the place of everything else including the salt!
You ever do any field herping around here?

This is serious. New Jersey lawyer-lawmakers are always alert to the opportunity, er, responsibility to enact laws to protect the public from dangerous animals. Somebody out there is in a lot of trounble, and, if there are no laws on the books in Jersy against keeping wild emus - which I doubt, knowing Jersey all too well - I'm sure some alert lawyer-legislator will rapidly introduce one to take advantage of this opportunity to make more money, er, to protect the public from dangerous wild emus.

Authorities found the rattlesnakes, endangered snakes and a 4-pound caiman Wednesday morning after checking on a man who hadn't been seen in days.
Animal Control Officer John DeCando said the unidentified man was treated for a snake bite last week.
DeCando said the man faces charges for importing exotic animals.
