If by "how often" you mean how much can you feed eggs and not negatively affect the health of your animal - there is no answer for that. I have not explored this answer, and neither should you.
I will say that eggs are good food for monitors if fed in moderation, this I know. I've done it for years. I usually feed eggs - hard boiled or scrambled twice a week or so in the warmer months when the animals are eating more often. I've also mixed eggs with ground turkey, chicken parts and other stuff.
In between these feedings they are offered balut (embryonated eggs, either chicken or duck) which is MUCH better than plain eggs. Also crayfish and rodents.

Where do you get balut...I thought it was only available in the Philippines. I feed mine eggs twice a month, they are moderately interested, but not all that exicited over them. I only make one scrambled egg and feed two ackies and a dwarf tegu and usually some is still thrown away. I view it as a treat, not a staple. Did you ever think about ordering your crickets and mice in bulk so you don't have to run to the pet shop? It is not only more economical, the quality is probably better too. I buy 1000 crickets shipped for $16 and the pinkies are .35 each in lots of 100. I'm sure you are paying lots more at the pet shop, the local one around my area charges $1.19 per pinky and $1.00 per dozen crickets. Good luck.

you'll still have to drive to buy mice and/or crickets for most of your monitor's meals. Egg should be an occasional treat, not a staple.

yeah, once a month would be fine, even every couple of weeks if you wished.
As I indicated above, once or twice a week is fine for most species. Eggs are a natural food, but not a whole animal food.
I suggest you keep a variety of foods on hand (crayfish and rodents for instance), and freeze them so that they are available at your convenience.
To Pam: I purchase balut at a weekly farmer's market, but it's also available at asian food stores.
