I'll start by saying I know I'm an idiot, but I just wanted him to have some fun. So my skink got up under my bathroom vanity, through a space only a skink could get through. I've left out a bit of canned cat food on a plate & one of the hiding logs from his cage & have shut the door to the bathroom. Do you think he'll come out?

You're not an idiot. It's commendable that you want to provide your skink with a "fun" time. Commendable but misguided. No offense is meant by that at all. I think it is the most natural thing for us to try to give our pets what we would like, although it is only occasionally what the animal would want.
At any rate, the very same thing happened to me in my early days of BTS-keeping. In due time, a day or so, he did come wondering out again, possibly driven by hunger or perhaps the typical BTS drive to explore. In all likelihood, Indy will come crawling out when he feels like it. Leaving the food is a good idea (especially if it's smelly) and hopefully you'll make sure it won't happen again . Keep us updated.

Thanks. He's not out yet this morning. I left out some canned cat food last night & changed it today as it's dried out. The bathroom is warm, so at least he won't go sluggish under there I'm comforted that I know where he is.
