My snow is about 4 feet right now, and she's eating 1 or two rat pups a week.(they have all their hair but are still being suckled by mama rat) I can't imagine she'll ever eat bigger than that, but she's only 3 years old, so who knows. Some corns never eat larger than adult mice, it just depends on the snake probably.
They are easier to care for than a boa I think, not that I have any experience with Boas. And the color variety is near endless. I don't have any adult amel pics, but the yellowing really depends on their genes. Some get a lot of yellow/orange and some get none. Candycanes are supposed to have the "whitest" ground color as adults. Look around at the sites that sponsor this forum for some great examples of the different colors/patterns. The two I've had the pleasure of doing business with are South Mountain Reptiles and Kathy Love's-Corn Utopia. Both are great people with great snakes, so if you decide to buy online, I wholeheartedly reccomend both breeders.
Can't wait to se pics of your new corn
