Two questions: Bok Choy and Poop

Hi again

I have two completely unrelated questions this time:

#1. What part of the Bok Choy sould I offer my uro, just the leaves or the stem part as well?

#2. What is uro poop supposed to look like? I've noticed some variations, is is always supposed to be the same? Would any kind of poop indicate a problem?

And here's a picture of the little dude (he is still nameless) too.

Doug Dix mentioned Bok Choy at his talk in Arizona this past weekend. He said they like the leafy green part, and to feed the stems to your tortoises (if you have any).
