I'm sure you could, but if the snake can do it itsself, I'd leave it alone. They basically crawl out of the old skin, leaving it inside out and all in one piece. I think the only reason to help it is if it's having problems. And then you are better off just letting it soak in a plastic cup half filled with water and paper towels for a bit.
Just my opinion, but I think letting the snake do it is the best.

If it'll let you, sure. You just need to be careful. Keep your fingers wet, and just rub WITH the scales (in the direction they point). Do _not_ pull the shed or rub against the direction of the scales. Take care not to use too much pressure, and definitely do not use your fingernails. If he gets squirmy, let him alone.
Though if your snake is as little as that photo there, it would probably be best to raise your humidity or let him soak it off. He's probably too small to do that safely.
