i have that problem too! but i havent really tried to change over to white mice yet. what have you tried so far?
im gonna have to do it soon here. ill be interested in what replies you get.

Have you tried feeding in a really dark room with a heat-light (the red type) just for you to see what you are doing? I have never personally had this problem, but I always feed in a dark room (during their 'night' cycle...not just a closet during the day 
and have never had ANY of mine refuse a particular color-variety of either rats or mice.
