This is a sometimes debated issue. It seems in the wild they take berries (especially mulberries and blackberries), mushrooms, and the leaves of some plants when less animal food is available. In captivity they tend to strongly prefer meat and bugs and if they think they can get some they avoid the plant matter.
To get them to eat more vegetable matter sometimes it helps to take a lean cat or dog food (canned, wet) and mix in some chopped greens and smashed squash and carrot slivers and bit of pumpkin. Start with a small amount of veggies and lots of canned food. Slowly add more veggies over the course of ten ot twelve feedings. If this doesn't work putting earthworms or superworms in a mashed up baby food covered slad sometimes works (pick good veggie baby foods)
Fresh mushrooms and cactus pads and fruit are sometimes accepted as well.
You might also try using a cheese grater to make very tiny bits of veggies and sprinkle thme on top of a plate of worms and bugs.
Also it helps to feed you insects good diets and "calciumize" the worm's soil.
