My beardie is a little over 1 year old now and recently she's been losing interest in crickets. She'd rather eat veggies (or worms of course). Does this mean I should switch her to a worm, pellet, or veggie diet?

It's perfectly normal for dragons that age to eat less insect food. Most dragons a year old and older really only need to be fed insects 2-3 times a week with mixed greens offered all other times.
