I have dealt quite extensively with amelanism (often called albinism) in reptiles - primarily snakes. I am currently working with Leopard Geckos, as well. I have noticed very few problems with amelanism. I can only recall one individual - an amelanistic California King, Lampropeltis getulus californiae, who seemed to miss his feed more often than not when fed live food. However he had a very aggressive feeding response, sort of eat now ask questions later.
My amel leopard geckos (I maintain and breed Tremper and Rainwater lines - I'm hoping for Bell line this year!) don't seem to blink alot when exposed to bright room lights and have no trouble feeding. They do spend a lot of time in their humid hide boxes but all my geckos tend to.
There is one caveat to this though - most of what I have bred in the past and currently have NOT required UVA and UVB or exposure to natural sunlight for proper vitamin production/absorbtion. You might want to post on the tortoise boards as there are currently several albino Spur Thighs (G. sulcatta) being bred with offspring for sale and there has recently cropped up an albino Cherry Foot. Another source might be the RES folks as there are quite a few albino Red Eared Sliders out there.
