Freezer burn...

Could someone with a bit of experiance please tell me what "Freezer Burn " is and what causes it ?

Freezer burn is the loss of moisture from the meat.

It is caused by contact with air. (Why? I'm not positive. Evaporation?)

That's why you can prevent it by vacuum sealing the meat.
