Dark leafy greens are good, such as red leaf lettuce and dandilion greens. Sliders can only eat in the water, so just put the food in the water. Thin slices of sweet potato and squashes are also eaten by some sliders. You can offer greens several times a week in addition to the regular pellets.

I guess the same process can be applied with fruits. Just cut them up. Some fruits though can get quite messy...strawberries, bananas, etc. And some fruits are better than others (bananas aren't really that good) but I kind of vary it from time to time just to give them balance. Try grapes, melons, oranges, anything you like you can try. I don't know if there are any fruits that may be toxic to them though...
