eating enough???

i have a young jackson's (4-6 months) and i'm wondering if he's eating enough...he takes down 2 adult crickets in the morning..then either 1 silk or king mealie or 2 mid size lobster roaches in the afternoon...i offer him more but he simply doesn't want it...he just wants to take his "walk abouts" and acts like i'm bothering him...he's always on the go and isn't thin...does all this sound ok?...he's about 5" snout to vent.

That's plenty of food for him. Jacksons will eat less than a simliar sized veiled or panther chameleon, since they are slower growers and have a cooler environment (slower metabolism). I think it's safe to assume that in the wild they eat quite a bit less than they do in captivity. Don't be afraid to cut back a diet. It's safer than feeding too much.
