What is he housed in? What are the temperatures? If you keep him at temps between 86-90 he should develop a healthy appetite. High humidity is a good idea too. Target and walmart sell good digital hygrometers that tell you the exact relative humidity. They are only about 18 bucks and are well worth the price. They are also a thermometer and clock and show daily extremes. If you have these temps and humidities already and he still doesn't eat then don't offer him food every day. He may just be stressed. Give him a hide box and offer him food once a week at best. Mice are young burms favorites usually.
