Spinach has a great deal of oxalates in it. Oxalates bind calcium and make it useless to the reptile. I would stay away from Spinach and anything else containing a high amount of oxalates. Go to my site (below) and click on "Nutrition Content" for a large list of foods that uros can eat. Pay particular attention to the calcium/phosphorus ratios and the notes column where it talks about oxalates.
As far as live plants go in a terrarium ... I use fake plants. But I also have a list of plants on my Nutrition Content page (at the bottom) that are safe for reptiles.
