Before you get in too deep make sure you have a market for the extras. Also, those temps will cook rodents at the high by a good 40degrees and lows are about 10 degrees below the lowest tolerable. 80 is a good high max to look at and I don't let mine get down below room temp but others have had colonies at into the 50s. Heat will kill them fast. Outside also opens them to infestation by wild rodents that could easily ruin your colony. Some sort of insulated, cooled and heated area sounds likely. Find a usable area with some climate control and then go from there.
Also the suggestion that rats may work totally for you is good. I only have mice 'cause I have tiny babys with Children's pythons, corns and Candoia. A gopher with any growth can go with rats and the size is much faster than waiting for a mouse to grow.
