They are all fairly calm, but like all snakes, there are exceptions. As far as normal temperament, I don't think you'll find many differences, for the most part. Toxicity is pretty consistent between sub-species, meaning a bite probably won't be fatal, but extremely painful. It's more of an individual thing for what you want. I personally like southerns the best, but I would keep any of them because they are great snakes. I would recommend getting an adult or sub-adult though, young copperheads can be a pain to get eating.

Agkistrodons are a great beginner snake. The bite has local systematic tissue damage that can be quite sever,finger loss, so don't be complacent. Pygmy rattlesnakes are great too...It is really up to you.
