WTF substrate question...

What are my options (other than paper towel, newspaper, reptile carpet, etc) of substrates for a single WTF to be kept in a 20 gallon high tank?

I'm looking for something simple, natural looking and great at holding humidity.

I've been looking at:
spaghum moss
ESU's Jungle Mix
compressed coconut bricks

Are these okay? What other ideas can I consider?

I'm also concerned about being able to easily find and remove waste.

Thanks for any advice.

Okay, well your safest bet would be the compressed coco fiber, which is what many keepers use in some variation. I personally use it mixed with milled moss for various reasons. Unmilled moss (like the type you speak of) increases the chance of an impaction, which is definately something that you want to steer clear of. In addition to that, it harbors bacteria, which poses another hazard to your frog. And then there's the fact that if you feed live prey, such as crickets or the occasional tasty meal/super/waxworm, they will disappear into the moss faster than you can say "bad idea." As for the Jungle Mix, a long time ago it was the staple of many of my tanks, but recently in the last year or so the amount of dangerous wood slivers and large chips doesn't make it worth the hassle. So unless you don't mind sifting through and checking it thoroughly, I wouldn't recommend that either. The compressed coco fiber is great stuff, and I highly recommend it.

What exactly is milled moss? How do you use it with the compressed coconut? How often should I plan on completely changing the compressed coconut?

Milled moss is peat/sphagnum moss that has been ground up to a soil like consitency. I use it to provide a more natural color, and also for the benifit of my plants. It also holds moisture much better, and many of my tree frog tanks have it added in some ratio or another. It can be bought at most nurseries, just make sure that it contains no fertilizers, pesticides, or other additives. In my experience the quality is better from a nursery than a hardware store, they do carry it also, but many times it has perlite in it, which isn't listed on the package.
With one frog, and spot cleaning when able, that should last you many months provided you keep it in good condition, avoiding extreme moisture.
