I´d suggest to go for a water potential in the -0,5 to -1 Mpa range.

we have never used humidity gauges, so i wouldn't know a particular percentage to shoot for, but typically, if you CAN close off more of the circulation, you should, as we lose enough through the nooks and crannies in the lid, and that it keeps it in the ballpark, so if it is more "open" i would close it up...
