I don't know if anyone individually vacuum packs them. It would seem to me that would make them prohitively expensive.
I order around 1,000 mice and rats per month. The folks I buy from vacuum seal them but they come like:
pinkie mice 50 to a pack
pinkie rats 25 to a pack
fuzzy mice 25 to a pack
weanling mice 50 to a pack
adult mice 25 to a pack
small rats 25 to a pack
large rats 12 to a pack
jumbo rats 6 to a pack
collossal rats 3 to a pack
I guess if you're willing to spend the money you can probably find someone that would individually pack them for you. I'm sure it would double the cost.
I figured as much, but thought I'd ask just in case....

Why would you need them individually packaged?
I always worry (probably needlessly so) about freezer burn. I realize it doesn't affect the quality of the food, just the taste. But since I buy in bulk i have this fear of my snakes going on strike and refusing their food if it gets freezer burned - and them I'm stuck with a bunch of rodentcicles. I plan to get more snakes, but now I only have 2. Just thought it would be convenient to be able to just reach in the freezer, grab the individual rodents I need and toss in a bowl to thaw.

` I too order a couple of hundred pounds of rodents, at a time. I get them dry frozen, so they don't stick together, but in vacuum sealed packs of 10 to 20, or more. When I have leftovers from an open pack, I vacuum seal them with a vacuum sealer for leftovers, from Sears. Works like a charm. When someone wants to buy frozen rodents from me, I can give them vacuum sealed, in the amounts they want.

You might try doing your self with a "seal a meal" have wanted to do the same thing but have gotten one yet sold by ronco on tv at 4:00 am. If you know what i mean.
I buy my rodents from Rodent Pro, who don't vacuum pack, unfortunately. So I vaccuum pack my rodents when I get them into single serving groups, where convenient. So I pack medium rats into packs of 7, weanling mice in 10 packs, etc. Kind of a pain, but convenient when feeding time comes.

I get mine from RodentPro also, and I vacuum seal them individually or 2 per package. I think it takes me about 2 hours to seal 200 mice.
