I know that snakes generally do not eat during a shed, however I have an albino nelsoni who will feed during shed, is there any reason not to feed during a shed if she'll accept it?

first of all, in the pic it looks like your snake has already "cleared" so shedding is imminent. it is more common for snakes to feed at that stage than when they're very blue.
the only risk is that it seems snakes might be a little more likely to regurg a meal taken during shed: i've occasionally seen a snake that's eaten dozens of times without regurging, suddenly it regurges and i wonder why, and the next day it's blue and in shed. the association suggests to me at least that the shed stage probably prompted the regurg, though i can't prove it.
so the question is what's gained--an extra meal a month? vs the modest/moderate risk that a snake might regurg, throwing it off feed for more than one meal. it's a tough call i guess.

that the snake had problems with shedding the skin and it was a very patchy shed. I didn't realize that the snake was going into a shed, and after I fed him, he started shedding right away in the feed box. Of course, I then had to wait for 48 hours to handle him and get him soaking to get the rest of the shed skin off.
