IMHO that FAQ question wasn't targetted with reptiles in mind, more like for infants with weak immune systems. I've used it after refrigerating for over 48 hours after being opened and never had a problem.

If you set out City water or refrigerate it, that has chlorine and/or ammonia in it for 48 hours, you can use it to put fresh water fish in, because the others things in it was neutralized or are no longer present.
Or if you live in an area with nasty smelling water (sulfur) and leave it sit out overnight or refrigerate it, the smell is gone, as is the sulfur.
This is the same thing that happens to the electrolyte and trace minerals in pedialyte after it is opened in 48 hours.
It is still useful as a fluid to hydrate, but the minerals are gone in it.
Freezing does perserve them, so making ice cube is a good idea, bag them in a zip lock and then you can thraw one as needed to use.
Also, rememeber that pedialyte and gatorade both have sugar in them, so diluting them also is a good idea
