can anoles go a week with out food and water?
i have a waterfall that if never seen them used (cleaned often )
i was going to heavlily mist them and leave a humidifir on and also add a bunch of fruitflies.
will that last them a week?

I really do not recommend leaving them without someone to care for them for a whole week. Your waterfall will supply them with water for most if not all of the week, but if any food gets in the waterfall(and believe me they will) then they might clog the pump up and make it so that the water will not flow properly. If there is just no way for someone to take care of them while you are gone then I recommend the following.
1. Get a timer so that the lights goes on and off.
2. Make sure there is plenty of food for the food 
3. Make sure to fill up both the humidifier and waterfall with water.
That is all I can recomend and maybe someone else will have some suggestions, but I HIGHLY recomend having someone take care of them while your gone. Another thing to consider is the stress of having all thoes extra flies roaming around the tank.
I have a water fall for mine as well but through all my observations he does not use it. If I skip misting fo a day or two he acts like he just crawled out of the desert when I do mist him which leads me to believe he has never figured out the waterfall. I would also have to recommend having someone look in on them.
I am taking a trip next week for 7 days and all of my animals will be cared for and boarded at the reptile shop I use. I have purchased a Monitor and Chameleon from them so they only charge a small daily fee. Fortunately for me the Chameleon and my Knights anole live in the same enclosure. I was going to have a friend check on them but I didn't want to chance it.

Anoles do not carry much extra fat so they need to be in really good condition if they are to go without food for several days. Water is very important to them also if you are gone.
One thing I do is to leave a bowl of meal worms for the anoles and some type of circulating water (airstone, waterfall) for them to partake in while you are gone.
