The reason why herps shed as opposed to just shedding skin cells constantly as humans do is because they put all their energy into growing at one time, instead of constant growth.

Mammal skin is totally different than reptile skin in that mammals constantly shed dead skin cells (dander) while regenrating new cells underneath. Human beings lose millions of skin cells every day, and that's why we see so many products that 'exfoliate' the dead skin cells from our bodies. Reptiles, on the other hand, do not lose their skin cells, but their entire epidermis (outer skin) comes off all at once after a whole new layer has already grown underneath. Of course, they will shed more rapidly and more often as they grow from hatchlings to adulthood.. they literally outgrow their skin! It does slow down as they reach their full size.
