I was wondering if its ok to leave him some food on his dish? maybe a bit of fruit or a little bite of turkey? Should I leave it on the cold or hotside? ornot at all?

The turkey will slowly cook and become very hard to chew, fruit, like grapes can sit pretty long. Cool side cooks slower.
Mine are pretty small yet, but growing so fast that I always leave some dusted crickets in the enclosure. Put half an orange and a small jar lid full of either iguana pellets or bearded dragon pellets so the crickets have something to eat and drink and they will not try to chew on your tegus. They are always fresh and ready for a quick (and I do mean quick!) and healthy tegu snack.
