Paul, one more question. I'm going to use a thermostat with this set up you suggested, should I just duct tape the sensor to the outside of the pvc? Or do you have a different idea. Thanks again amigo.

You can do that. Personally, I would use wire ties instead od the tape though. Also, if you do attach the probe directly to th PVC, you might consider setting the thermostat about five degrees higher than you actually want it, because it will be much warmer right on the PVC than it will be on the substrate.
