Well if the bits bug ya and they are actually getting through your skin, wear gloves. Then just hold him enough, but be careful not to stress him too much. I would let him get use to his surroundings a little bit first and leave him alone for a week. Then just hold him and dont control the head all that much.

I have one that likes to bite too. I wear gloves to handle him, I tried to tame him for a few months and it isn't working so I have decided he just doesn't like to be handled and I now leave him alone except for feeding and cage cleaning. I hope you get better results than I did, and get a pair of gloves they help alot.

I find that when they are curled up and in a strike position that they generally dont turn and strike. I slide them on my palm with their head facing away, holding them a few inches above the floor of the cage. I hold them like this about 5 minutes at a time. Eventually they relax after a few minutes and crawl off my hand back onto the cage floor. This usually leads to me being able to pick them up without them even tensing up. Good luck!
