Sure. Keep in mind that most turtles, even when they are young, will have the taste for leafy greens, and that will increase as they age and their diet switches to predominantly plant-based foods. So, your plant might not last long because your turtle will use it to snack on between meals. That being said, you might not want to bother trying to plant it if he is just going to munch it down to nubs, and leave it in it's container. Whether you plant it or not, your turtle is likely to eat it.
