I wondered the same thing too until....
Recently I saw my little Ambanja female clinging to the far side of her cage, weaving herself into "shooting" stance. I couldn't figure out what she was going to zap until I took a step closer and saw a house fly on the *outside* of her screen cage. I laughed but also felt bad for her, as she wouldn't be able to actually get what she wanted. Luckily I was able to trap the desired fly and release it into her cage. I've never seen a chameleon so excited about potential food before. House flies, who knew?
Just please, don't try to cut corners here by offering you chameleon 'wild caught' house flies (YUCK!!!!). Offer only cultured house flies, either from a reliable source, or you can also try Skipio's

I bought a culture of them. Never saw my cham eat one but I know it is since they are no longer in the cage and not flying around my apt.
Yes ... do buy a culture and dont use ones from outside. Knowing what they crawl on would you want to eat one?
Gut loading them after hatching is easy - feeding them is even easier. Keeping them in fridge makes them dormant so they cant fly or crawl. All you do is toss them in the cage then they come back to life then your cham ends their life 
I have found that just about all Chameleons love house flies. One thing though, do not feed wild collected house flies as they carry many different types of bacteria and are deadly to animals. In the wild house flies feed on feces, animal carcasses, and pretty much garbage. This will all be ingested by your animal when they eat the Fly. There are a couple of companies out that supply medical grade fly cultures. The company I have used is Beneficial insectary.
