The venom will remain fatal for at least several days, so scraping across the fang of a dead snake can certainly cause a full envenomation. The snake can strike after death by reflex actions, duration of reflex depends, but Im sure that it could strike for somewhere around an hour after death.

How is striking after death possible? Doesn't "striking" involve a reaction to a stimulus, thus life?

Nerves are still firing after death. The animal is no longer consious and can feel no pain but still has reflexes.
