There was a while when I was breeding both argus monitors, button (king) quail, and japanese quail. So I can tell you with complete confidense that my argus all loved quail. The adults, the young, the eggs. They were a nuisance when they would get out when I was cleaning, I'd look up and see an argus with its head in the egg bin - crunch, gulp! crunch, gulp!
Of course, there are arguses we are talking about. They are garbage disposals. They'll love just about anything vaguely meat-like that you give them. Rats, mice, quail, whatever, they don't seem to pay too much attention. Thrash thrash gulp and it is gone. The only thing I ever tried to feed them that they didn't really take to was bullfrogs.
Are quail good for them? Well, I still have two of the offspring that were partially brought up on quail from parents that ate a bunch of quail. They are strapping big male argus monitors, healthy in every way that I can tell (although one of them is getting a bit of a paunch. I also only get to see them once every few months; my wife is looking after them while I am gone). Really, just about anything you feed them is fine in moderation. Most whole food will probably be okay as a major part of their diet. So stop worrying so much!
