Juveniles are mostly carniverous, then change to be mostly vegetarian as they age.

Mine is tiny, hatched in 2003. At first he preferred a popular Turtle Food brand (mostly sea fish, not suitable for freshwater turtles), then superworms. Later, he suddenly balked at both!

Now he eats earthworms, flies and spiders. I will try Salmon eggs next (freshwater product, not from the sea).

Be prepared for finicky behavior, and that their tastes will change across the months. Keep experimenting to find what yours likes; these can be highly individual creatures.

Then add some variety. As they get older offer water plants
like anarcharis. Also romaine lettuce, thinly sliced squash
etc.

My eat a little of everything but they are about 9-10 years
old now.
