If you have not already asked this over on the Monitor forum I suggest you do. It has a great deal of experienced cage builders.
Regardless, there are very few sealers I like for large varanids. Fiberglass resin (basically an epoxy) is cheap and can be brushed on similar to a paint. However, it is much more difficult to work with and requires a well ventilated area as well as a respirator. But not a bad choice.
Another epoxy that I read about on the Monitor forum is West Systems Marine Epoxy. A bit more expensive but supposedly easier and safer to work with than fiberglass resin.
With all that said I would probably just cover the inside of the cage with Fiberglass Reinforced Panel, aka FRP board. Just cut it to size and attach it with adhesive or screws. Joints can be sealed with liquid nails or silicone.
Biggest problem with FRP board is cutting it. The dust is pretty nasty if you use a power saw of some sort. I have heard you can cut it with heavy duty snips to avoid the dust.
