i already put one coat of polyurathane on my plywood and 2x4s do i need to apply any more and if so how many ?

Well ive never built a wood cage, but i think your suppose to do more than one, id say do 2 atleast.
high humidity, I usually do 2-3 coats (2 is usually fine, just make sure you get it totally covered).
Make sure to let your cage air out for at least a week or two (or until you have NO smell from it) so you don't harm your animals.
In addition, I use aquarium sealant in the cracks and crevices to further insure I've covered all the wood. 
Share some pics of your cage when you're done. Always good to see everyone's handy work. ;D

I would go with no less than three. Especially on the plywood. For that 5 is even better. Just make sure to sand after that first coat, and then wipe with a tack cloth, and then again after the 3rd coat. This will give you a very professional looking finish.
If you stained first before you put that first coat on,you could have had a furniture quality finish.
And make sure to sand after that first coat dries. The polyurethane makes all the little "hairs", and splinters stand up and hard enough to sand off, so you wood surface is completely smooth.Make sure if there are any cracks or depressions in the wood where the poly can build up is dry.
The smoother and harder the finish, the easier cleanup will be, and your plywood will last forever.
