I offered my Beardie some turnip greens (he has never had greens before) and he started eating them like crazy. Do I just need to give them to him until he is full?

Yup,, let him eat all he wants. You might want to add some Endive or Escarole (sp?). That will balance it out for you. Remember, variety is Key! You can alternate. You don't have to offer all at once. Use the Turnip, when that runs out go with another, etc.
Having so many I go through quite a bit so I buy the bundles of Turnips and almost always have both Endive & Escarole to go with it. When the Turnips run out I get Mustards, alternating.
Then once & a while I add some yellow squash, raspberries, Hibiscus leaves & flowers, etc. Just to mix it up a bit.
