I have a 2 month old BD. ALl she wants to eat is crikets. When have your BDs started eating veggies?
Some start earlier than others, but the earlier they get used to them, the better, in my opinion.
What I advise is putting the veggies down first thing in the morning, and holding off the crickets until noon-ish. This has worked for many beardies, because then when they are hungry in the mornings they have no choice but to eat the veggies. It's kind of like getting a kid to eat their veggies before they can have desert. Sometimes it also helps to put a little bit of the greens on the tip of your finger and wiggle it around in front of the lizard's nose. This worked for mine, he was intrigued by the movement and took a taste, and realized "hey, this stuff is edible!"

also try dumping the crickets onto the lettuce. that way he might accidentally eat the lettuce and then realize how tasty it is.

ALthough it might not work for some, when i first got my beardie, he wasnt hot on the veggies. So, I bought some "can-o-crickets", Mixing them in his greens. It only took hand feeding him one or two to get him to go after them on the greens. He ate most of the greens just looking for the crickets. After a few days I switched the can crickets for real again, and he was eating the veggies as well. Although he usually didnt eat it all right away. I also found that he prefers some greens over others, and yellow veggies always go first! Try different choices, maybe he just doesnt like whats on the buffet..
Just my opinion, this worked for me. And he eats like a champ.
