On both the male and female there is some unshed skin left around the nostrils. Is this a warning sign for something bigger or did I not have the humidity high enough?

little bits of skin usually stick around several days after the cham completes his/her shed. The skin may stay around toenails, the end of the tail, on one or more dorsal crests, around the mouth, or around the nostril. My male veiled still has some left around the nostril and he shed more than a week ago. He usually does that and it falls of after its stay. The humidity in my cham room is usually 65% and i spray them at least every day with hot water.
Keep spraying him, and it should come off.
PS, one of my females sheds over 4 or 5 days while the other sheds in 4 or 5 hours....it depends on the animal.
