Man-eating? What are you feeding him? Midgets?lol
First off, you're obviously scared of the snake or you wouldn't call it 'man-eating'...CHILL OUT! Do what ever you need to to keep yourself from getting nervious during handling sessions (if you need to start off with gloves do it, but you will need to ween yourself off of them as you get more comfortable with the snake). If your nervious the snake will become nervious. Nervious=Defensive=Bites.
Secondly, carpets tend to be fairly active so do not restrain them as this can case them to get defensive. Defensive=Bites
Instead hand-over-hand them.
Thirdly, all snakes do well with set patterns. Get in the habbit of using something to let the snake know its getting handled instead of being fed. Feed it outside the cage in another container, or use a snake hook, ect...

All it means is that your snake has never been handled or has been mishandled in the past (being thrown comes to mind). Your carpet is scared to death of you and sees you as a preditor...hence the striking for the eyes. I'd suggest perhaps getting one of those clear plastic welder masks to protect your face. The best way to break a habbit is to render it useless. If it doesn't make you go away then the snake will stop doing it. After which you can remove the mask with pretty certain safety.
Again I'd like to stress that you are trying to teach the snake that you are not a threat and are only, for all intents and purposes, 'a big moving tree'. You need to have confidence, and patience as this can take a couple of months depending on the snake.
