My guess is that is used as a source of fiber. I don't think it would be bad for them if they ate it. As part of a varied mix I would think it would actually be good.

A friend of mine has been feeding his torts, (including leopards), wheat grass for years. He mainly does this in the winter using a seed sprouter in his kitchen. It works pretty good in his situation.

On the downside, I've read that some types of sprouted seeds are too rich in certain nutrients for tortoises but I don't know if wheat grass falls in that catagory. Works for my friend. I'd just recommend variety.

Variety is the way to go because even experienced nutritionist don't really seem to 'know' what is actually required. There are just too many variables to form a set conclusion.
