I didn't think she was eating the stuff at all, but last night I woke up at like 3 AM and she was lapping it up. Should I stop with the crickets now that I know she eats it?

There have been generations raised on nothing but crested gecko diet . So it can be belived that crested gecko diet provides what they need.
However ... the more varied you can make their diet the more likely they will recieve any trace elements that crested gecko diet might not supply. There is no reason to not feed crickets occasionally to your pets.
Not too mention watching the geckos chase crickets is probally the best fun you can have with your pets.Or at least it is for me.
