Congrats on your new baby tort! I personally do not like rabbit pellets because they mold easily. Depends on how big the little one is (and I assume small), I put my babies (I don't have sulcata, I keep leopards)on towels with paper towel on top. It gives the babies good footing and easy to clean. I feed them on small paper plates and as they get bigger I use cypress mulch and use a flat rock as their dinner plate. What you are feeding it sounds fine, remember to avoid too much protein. I grow most of my food items for my torts, such as clovers, dandelion, endive, graze mix (www.turtlestuff.com & www.turtlecafe.com), grass, hibiscus flowers & leaves, grape leaves, mulberry leaves, nasturtium, opuntia, etc. and little to no fruit. Good luck with the baby, torts are awesome animals!
