Please forgive my ignorance, but I've read so many different opinions that I'm not sure what to believe. How old do beardies get? How long will a vitticeps get nose to tail? How much does the average fully grown vitticeps weigh?

age: with good care average is 7-10 years
length:They can get up to 24 inches but average is 17-20
weight:Im not positive but i think average is 400-600 grams

Really depends on your feeding schedule as well as the sex. the females will become full grown earlier than males. you can get a female beardie nearly full grown at a year if you feed them once a day, their entire diet. I have read about this, however mine was about full grown at a year and a couple months with feed 2x per day habit.

I think you have the sexes backwards. The females take up to 2 years to be fully grown and mature, males are typically full grown sooner. My 19 month old female has grown both in length and girth over an inch since her first year. They do slow down after 10-12 months but they still grow after that.
The overall size and weight of an inland bearded dragon really depends on genetics and husbandry. A poster here has a healthy monster of a bearded dragon that tops the scale at 1000g and is over 24 inches...however the average is pretty much what is indicated earlier.
