I use one of those hand held graters and shred it as I do with carrots, eggplant, squash, I shred them all over the greens.

I'm sure everyone does it different!

I chop it up. I first wash the sweet potato and then I make slices and cut into small pieces. I do this for my Mali and my sons iguana. I use to grate it. It is really up to the person. Grating does go faster but make sure you cut the grated pieces into bite size.
