I let my kids help by picking rocks and sticks out of dirt.

Why else have kids other than to take the work load off.
I was so proud the first time they started the lawn mower by themself. Gotta go, just the thought is making me misty eyed.

How do you get them to put the leaves in the bags?

Easy. Get giant white trash bags and give each kid a set of magic markers. They get to decorate the bags they fill! They can build giant 'snow men,' lay out a string of bags and turn it into a snake, all sorts of creative things. Gives your trash men a giggle, and makes them less likely to run over your roses and your empty trash cans, too.
