Keeping Flies

How can flies (fruit flies, I guess) be kept for an extended period of time? I have 3 anoles, and with minimum fly orders usually in the several hundred to thousand, it'll take a while to use them all. Plus, I like to try to vary what they eat, so I don't want to totally switch. Can the flies just be put in the fridge like mealworms? I'm not looking to breed my own, just be able to use and not waste what I purchase.

Would'nt it be easier to keep crickets? For 3 anoles, 1000 crickets would last about 4-5 weeks if you got the smallest ones.
I have never had luck keeping flies for long periods of time.
All my other bugs have been easy to maintain.
