Which kinds will eat (pinky) mice and how big do they get?

Most species will convert to mice, particularly sirtalis, elegans, radix, cyrtopsis and marcianus. These are among the more common varieties being bred and offered. I have an Eastern Ribbon that feeds on f/t pinks as well. There are a few species that specialize in worms. There are individuals within these species that may be reluctant to eat mice. Most species of Garters range between three and four feet. Two to three feet seems typical. They are typically not as heavily bodied as a constrictor. Your best bet if you are looking for a pet is too decide what species you want and buy one that is already established on pinkies. A normal colored Plains might be a good choice. They are good pets and I think they are among the best looking Garters around. I prefer them in appearance to the high dollar albino morphs of the same species. Just about anything from the sirtalis complex would also be a good choice as would a Wandering Garter. Checkered garters are supposed to be excellent but I have no first hand experience with them.
